Previously the chefs of Michelin Green Star - Le Garde Champetre in Gyé-sur-Seine. Created a culinary studio that can collaborate with artists and artisans to celebrate the art of feeding from the heart of champagne.
Their cuisine is focused on locally sourced products that grow in the rhythm of the nature. Adding preservation and fermentation techniques to transport flavours through the seasons, enhanced with their cultural heritage, strong attachement to the sea and the connection with live fire cooking.
